Under the Table’s online reputation precedes it. With dozens of online reviews touting the “family-owned gem” and its “amazing food,” owner Kim Simpson says she and business partner Betty Simpson made it through their first year of business on the strength of word-of-mouth recommendations. Tourists from New York and Los Angeles and Europe are impressed by what they read, and sometimes come straight from the airport to her restaurant.
At Under the Table, established in June 2013 and located below street level on Parliament Street, Kim and Betty are omnipresent. The two are the entirety of the front-of-house and back-of-house operation, save for a dishwasher and one additional server Thursday through Sunday.
“It’s a perfect balance,” says Kim. “I want to take care of people, and she wants to cook.”
