Your first visit to Le Boucanier par Atkins & Frères will be a chance to meet a craftsman who is passionate about his job. Jérôme Pelletier has been smoking fish since 1998 and in 2010, left his native Saguenay to settle in Montreal and open his own shop. Inspired by a pregnant friend who wanted to enjoy hot smoked salmon — cold smoked salmon wasn't recommended by her doctor — he began to develop his own product. "I started with that smoked salmon and then I opened the Boucanier with 35 products," explains Jérôme. At his small shop on Marquette Street, usually discovered through word-of-mouth, Jérôme developed over 900 variations of smoked products.
When a fire destroyed the building next to the shop, Jérôme was forced to shut down. Then he received an unexpected phone call from the Gaspé. The team at Atkins & Frères, a seafood processing company, had been moved by Jérôme's story and wanted to help him reopen his store in a big way. "The next day [Guillaume] was here, we had supper together, and we realized that it was a perfect match, like a puzzle!" recalls Jérôme. He decided to roll up his sleeves and reinvent himself as Le Boucanier par Atkins & Frères.
