The name, a mashup of “cheese” and “waffle,”  might be off-putting but only until you’ve tasted the chaffle. Made with eggs and grated cheese, this seemingly weird food trend popped up and quickly went viral. Mozzarella is the chaffle chef’s cheese of choice, as it’s mellow enough to blend harmoniously with the egg, and taste like a REAL waffle. They’re suitable for low-carb and gluten-free diets. Plus, did we mention each mini waffle has just 2 g of net carbs and less than 200 calories?

How do you make chaffles?

We thought you’d never ask. The key to the perfect chaffle is a good waffle iron. You can use a full-size model or a mini waffle iron–all the rage with chaffle-lovers. Ready to get cooking? Here’s what you’ll need.

Basic Chaffle Recipe
Yield: 4 servings. This recipe is for a standard size waffle maker. If using a mini model, reduce all quantities to ¼.

INGREDIENTS

  •  4 large eggs
  • 1/4 cup of almond flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 2 cups of shredded mozzarella cheese

INSTRUCTIONS

  1.  Preheat waffle iron. In a medium bowl whisk eggs, almond flour, salt, and baking soda and mix well. Add mozzarella and stir to combine.
  2.  For an extra crispy chaffle, sprinkle a small handful of mozzarella over the waffle iron’s lower surface and let it melt. Then spread ½ cup of batter onto the cheese. Top with a few extra sprinkles of mozzarella for an even crust.
  3.  Cook until crisp and golden brown, about 3-6 minutes, depending on the machine, or until it stops steaming. Remove the cooked chaffle and transfer to a paper-towel-lined plate to cool. Repeat with leftover batter.

This breakfast staple is most often topped with a pat of butter and syrup (go sugar-free to keep it keto), or you can take it the next level with any of the variations that follow.

Delicious ways to top a chaffle

  1. Make it a breakfast sandwich when you fold it like bread and fill with scrambled eggs, bacon, and shredded cheese.
  2. Try a taco chaffle by adding ground beef sautéed with taco seasoning and toppings like shredded lettuce, grated cheddar cheese, chopped tomatoes, guacamole and a dollop of sour cream.
  3. What about a pizza chaffle? Mix 2 tablespoons grated parmesan and ½ teaspoon Italian seasoning into the Basic Chaffle batter (see recipe above) and cook.  Placed cooked chaffles on a parchment paper-lined baking tray and top each as you would pizza crust. Add tomato or pizza sauce, grated mozzarella, sliced pepperoni, and your favourite toppings. Broil in a hot oven until cheese browns and bubbles.
  4. Chaffles stand in for hot, buttery garlic bread when you add some garlic powder to the batter and melt butter and grated parmesan over the cooked chaffle.
  5. Add the following ingredients to the Basic Chaffle batter to enjoy sweet cinnamon roll chaffles: 2 teaspoons each of vanilla and ground cinnamon plus 8 tablespoons of calorie-free sweetener of your choice. Drizzle with maple syrup or a keto-friendly substitute.

How do you store leftover chaffles?

Leftovers? What leftovers?! If you do happen to go a little chaffle-happy with the waffle maker, store your cooled chaffles in an airtight container in the fridge or freezer. Pop them in the toaster, skillet, or oven to reheat and find new ways to work the chaffle into your menu.
