Combining the meaty satisfaction of sausages with the sweetness of a homemade sweet corn relish, this is the perfect meal for a warm summer night. Plus, the superfood ingredients make it much healthier than anyone would suspect.

Get healthy with this sausage & homemade relish

Ingredients

  • 2 peppers (1 red, 1 orange)
  • 1 carrot
  • 1 onion
  • 8 meaty sausages, such as pork, bratwurst or Italian
  • 30 g (2 tbsp) olive oil or canola oil
  • 1 clove garlic, crushed
  • 150 g (2/3 c) frozen sweet corn
  • 5 g (1 tsp) cornstarch
  • 45 g (3 tbsp) cider vinegar
  • 45 g (3 tbsp) honey
  • 15 g (1 tbsp) whole-grain mustard

Directions

Preparation: 10 minutes. Cooking: 20 minutes. Serves 4.

  1. Preheat the broiler to high. Finely dice the peppers and carrot, and chop the onion. Broil the sausages for 20 minutes, turning, until they are evenly browned.
  2. Meanwhile, heat the oil in a pot over high heat. Add the pepper, carrot, onion and garlic. Mix well, reduce heat to medium, and cook for five minutes, stirring occasionally, until the vegetables soften. Stir in the corn, cover and cook for one minute, or until the corn has thawed.
  3. Mix the cornstarch with the vinegar to form a paste. Stir the honey, mustard and vinegar paste into the pan. Bring the relish to a boil and simmer for one minute.
  4. Transfer the cooked sausages to four plates and serve with the relish.

Chef's tips

  • Transform the relish into a cold accompaniment. Reduce the vinegar and honey to 15 grams (one tablespoon) each. Add 75 grams (1/3 cup) frozen fava beans with the corn. Stir in the vinegar and honey but leave out the cornstarch and mustard.
  • Serve sliced sausages on top of large baked potatoes with the relish. Add a spoonful of crème fraîche or Greek yogurt.
  • Try some of the delicious low-fat varieties of sausage, such as turkey or chicken.
  • If the oven is already hot for roasting potatoes, save energy by also roasting the sausages in a shallow ovenproof dish or pan.
  • Cook these potatoes for about 30 minutes at 175°C (350°F), until the skins are browned and the sausages are done, turning them halfway through cooking.
